Remove 1 head of garlic with skin still on. Place the clove on a cutting board and lay your sharp knife horizontal on top of the clove. Use the palm of your hand and lightly smash the knife down.
Easily remove the skin.
Preparing Garlic
After you've done a light smash on the garlic and peeled the skin, thinly slice lengthwise. This method releases the most flavor and oil in the garlic when cooking. You also get the most even cook whether you're caramelizing the garlic or lightly cooking.
