Peaches and Blackberry Cream and Crunch

Keeping things light and simple with healthy Greek yogurt, fresh fruit and berries, and a naturally sweetened walnut crunchy topping. I love this recipe as a dessert or refreshing breakfast!

Ingredients
  

  • ½ cup Greek Yogurt
  • ⅓-1/2 cup diced fresh peaches (option to replace with nectarines)
  • ⅓-1/2 cup fresh blackberries (option to replace with raspberries or blueberries)
  • ¼ cup walnuts, chopped (option to replace with almonds or pecans)
  • 1 teaspoon raw honey
  • ¼ teaspoon water
  • 2 drops vanilla extract
  • option to use maple syrup + vanilla, without water

Instructions
 

  • Decide if you're making this a single large breakfast portion or divide into 2 dessert portions and prep on 2 separate dishes.
  • Dollop the Greek yogurt onto a plate.
  • Dice peaches and sprinkle on top along with fresh blackberries.
  • Chop walnuts into small pieces.

OPTIONS FOR ADDING LIQUID SWEETENER

  • Combine 1 teaspoon raw honey with ¼ teaspoon water and a couple drops of vanilla extract. Mix well and toss with walnuts. Sprinkle on top of fruit.
    Option to freeze sweetened walnuts before adding on top.
  • Sprinkle walnut pieces on top of dish and drizzle with raw honey or maple syrup.
  • Combine raw honey with water and vanilla extract and toss with walnuts. Spread out on parchment paper and bake at 350°F for 8 minutes. Mix, then continue baking for another 8-10 minutes. Let cool before adding to the top of the fruit.
  • Leave off the sweetener completely!
