- ¾ cup diced apples (about ¼ inch cubes)
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 tablespoon maple syrup
- 1 cup rolled oats (option to use certified gluten-free oats)
- 1 ¼ cup water
GARNISH
- walnut pieces
- additional diced apples
- sprinkle cinnamon and maple syrup as desired
Dice apples into ¼ inch cubes.
In a small, heavy-bottom saucepan, add rolled oats, cinnamon, and nutmeg and mix together. Add in the maple syrup, diced apples, and water and combine. Heat on medium-low heat for 7-8 minutes, covered, stirring occasionally with heat-safe spatula or chopstick to avoid sticking. Decrease to low heat and keep covered for another 4-5 minutes.
Transfer oatmeal to a serving bowl, or two, and garnish with fresh diced apples, diced walnut pieces, and sprinkle with additional cinnamon and maple syrup to taste.
Enjoy with any milk of your choice, or Greek yogurt!
