This recipe adds an explosion of color to your table! The ingredients are unique and so is the flavor with candy cane beets and watermelon radish. If you're not a fan of beets or radishes, I say still give it a go, or make substitutes if you wish! Use this recipe as more of an “idea board” and get creative with how to serve it your own way!

This was such a fun platter to put together that you can easily make into a fruit and veggie salad!
The ingredients in this recipe were a bit out of my norm for what I have in the house. We went grocery shopping the day after Christmas and we just hit gold on low cost, fun produce. This recipe is a display of much of that produce for something unique and exciting to add to any meal (breakfast, lunch, or dinner)!
I decided to display this as a platter, which worked well for my younger daughter you like to see exactly what she's eating. She could easily pick out what she wanted and leave the rest. I think my husband was a bit hesitant at first with the flavor combinations, but quickly realized how the sweetness matches the stronger flavors so well.
You can choose to serve this as you wish and I'd love to see you share your ideas and pictures if you shake it up a little!
Ingredients
Watermelon Radish is incredibly beautiful to look at! When it comes to radishes, you might first think "spicy" but these radishes are very sweet and have great flavor. You get a touch of that radish flavor without it being overpowering. We got a bag of these for .99¢ so I wasn't about to pass them up.
Candy Cane Beets aren't something I regularly buy. We're all about function and low cost in my house and regular red beets are usually at the front of the line. But, when you can get 3 of these for .99¢ you jump on them!
Cucumber help round out the colors of the salad, as well as offer a more mellow flavor that's sweet. They're crunchy yet tender and make a great addition to this recipe.
Blood Oranges give a great depth to the flavors. They're sweet, yet richer tasting than a regular orange. They're color pairs so well with the purples of the radish and beets!
Mandarin Oranges are sweeter than the blood oranges. The dark orange helps give a great pop of color and the sweetness helps cut any bite you might get from the beet.
Pumelo Grapefruit or Vinaigrette are options for drizzling on top. I prefer the pumelo because it's light and sweet. This was one of the low cost produce finds and something fun to try besides the typical grapefruit. If you haven't tried one, they do offer that grapefruit taste, but they're lighter and sweeter in flavor.
If you're choosing to use a vinaigrette, I would offer it on the side as an optional drizzle. You're options are vast with this! Make your own by using a basic vinaigrette dressing and add raspberries, or orange to flavor it!

All I used was a sharp knife. You can also use a safe and easy-to-use Mandoline slicer like this one from Amazon.

Ingredients
- 1 cup. cucumber (sliced into rounds)
- ¾ cup candy cane beets (thinly sliced)
- ¾ cup watermelon radish (thinly sliced)
- 1-2 blood oranges (peeled and sliced into rings)
- 1-2 small oranges/tangerines/clementines (peeled and sliced into rings)
- slices of pomelo grapefruit or a light vinaigrette to drizzle on top
Instructions
- First, choose how to want to serve this. I have the portions set in the ingredients to work well for a platter if you thinly slice everything into rings. Doing it this way it tastes great when you layer one of everything like a sandwich.You can also choose to cut everything into small pieces or wedges and serve as a salad. Either way, I like it best when you have a little bite of vegetable with a little something sweet.I choose to serve it plain, then individually drizzle pomelo grapefruit or a light/sweet vinaigrette dressing.
- Peel the radishes, beets, oranges, and cucumber (leave strips of green for a nice look). Slice each one into rings, going really thin using a mandoline slicer if possible for beets and radishes. Leave wedges of the pummelo on the side to drizzle. Use a large plater and neatly lay them out to display all the brightness!
